Chocolate Chip Crunch Cookies

Well helloooo readers!  Sorry I’ve been M.I.A. for too long.  Midterms are officially over, and aside from a paper due this week, I’m basically free until finals (only a few weeks away though…).  I’ve been baking and cooking up a storm and I have so many good recipes to share with you over the next couple of weeks or so.  How about some cookies to start off?

My mom got me this book for Chanukah this year.  It’s a murder mystery, and the main character/unofficial detective runs a cookie shop.  It’s an easy read, and the best part is it includes recipes for the cookies that the main character bakes at her shop.  I decided that I’m going to try them all out.  First one down: Chocolate Chip Crunch Cookies.

Chocolate Chip Crunch Cookies

Note: the recipe in the book makes 6-8 dozen cookies!  WOAH, that is a lot of cookies.  I halved the recipe and made about 3 dozen cookies, but listed is the original recipe that makes 6-8 dozen cookies.

Ingredients

1 cup butter, melted

1 cup white sugar

1 cup brown sugar

2 teaspoons baking soda

1 teaspoon salt

2 teaspoons vanilla

2 beaten eggs

2 1/2 cups flour

2 cups crushed corn flakes (just crush them with your hand)

1 to 2 cups chocolate chips

1. Preheat oven to 375 F with the rack in the middle position

2. Melt butter, add the sugars and stir.  Add soda, salt, vanilla, and beaten eggs.  Mix well.  Then add flour and stir it in.  Add crushed corn flakes and chocolate chips and mix it all thoroughly.

3. Form dough into walnut-sized balls with your fingers and place on a greased cookie sheet, 12 to a standard sheet.  Press them down slightly (you can just use your finger)

4. Bake for 8-10 minutes.  Cool on cookies sheet for 2 minutes, then remove to a wire rack until they’re completely cool. (the rack makes them crisp)

Another Note: If these cookies spread out too much in the oven, reduce temp to 350 F, and do not flatten before baking.

The cornflakes add a nice crunch to your typical chocolate chip cookie.  This recipe also only requires one bowl to get dirty, so less cleanup for later!  I served these at a nye party, and again at a party at my apartment  and they were gone within minutes.  These are a crowd pleaser, and the recipe makes enough to share or freeze.  I know you will enjoy the first batch of cookies from Chocolate Chip Cookie Murder!
