Fancy Grilled Cheese

Who said being in college and being cheap means having to be boring?

Tonight my friends Ryan and Robyn helped me dress up one of our most beloved staples:

Winter Fruit Grilled Cheese

We’re on a roll here with the minimal ingredients!

Mm, brie! My favorite. First things first, cut carefully cut the rind off. Then make thin slices for sandwich layerin’. They’ll be very irregular, it’s fine.

Thinly slice the apple and pear.

Butter one side of each piece of bread. Assemble sandwiches with chunks of brie and a combination of apple and pear slices.

Cook over medium heat until bread is browned and Brie is melted. Oh. Man.

(Hardest part), allow to cool for about 2 minutes before slicing in half. I think we made it about 50 seconds.

This couldn’t have taken us more than 15 minutes to make. It had a wonderful creaminess from the brie with the surprising/refreshing crunch from the apples and pears. Treat yourself to some nice artisan bread (ours was fruit and nut), it really does compliment the good stuff inside all for the better. Lovely, lovely ┬átreat on a foggy, chilly Sunday evening.

Hope all of your weekends were enjoyable! The super bowl starts here in about half an hour (11:30 pm), suffice it to say I will not be watching. Tea and bed time for me, personally. For all of you still to have dinner time, try this!

Winter Fruit & Brie Grilled Cheeses, inspired by Ukrops.com
Yield: 10 half sandwiches | Prep Time: 5 minutes | Cook Time: 8 minutes

Ingredients:
1 loaf Artisan Bread
6 oz. Brie cheese
1 ripe red pear
1 Granny Smith Apple
Butter

Directions

Carefully cut the rind off of the Brie. Then, thinly slice the apple and pear. Butter one side of each piece of bread. Assemble sandwiches with chunks of Brie and a combination of apple and pear slices. Cook over medium heat until bread is browned and Brie is melted. Allow to cool for about 2 minutes before slicing in half. Serve on a platter.
