Banana Cupcakes with Honey-Cinnamon Frosting

The theme for this next week (give or take a few days) is bananas!  This means our posts this week will all share a common ingredient, bananas.  This is actually really ironic because Amy doesn’t even like bananas.  But bananas happen to be one of my favorite fruits.

I was looking for a good banana recipe, and came across a recipe for banana cupcakes with honey-cinnamon frosting originally posted at .  I just took my first bite and it tastes incredible!  Leave off the frosting for a delicious muffin in the morning, or add frosting for a nice treat at night.  I made a few changes to the recipe your every day mama posted (originally taken from Martha Stewart).  I didn’t have pecans so I used walnuts, I replaced the almond extract with more vanilla extract, and instead of using 1/4 cup of nuts I used about 1/3 cup.  These were really easy to make, and the ingredients can be found in most households.  Enjoy!



gather all your ingredients for the banana cupcakes


and for the frosting

whisk together the dry ingredients


make a well in the center of the flour mixture, and add wet ingredients.


fold in walnuts.


scoop about 2 spoonfuls into each muffin dish


take muffins out of the oven in about 20 minutes


let cool for about 30 minutes before frosting.



Banana Cupcakes

1 1/2 cups all purpose flour

3/4 cup sugar

1 teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup unsalted butter, melted

1/4 cup applesauce

1 1/2 cups mashed bananas (I used 4 very ripe bananas)

2 eggs

1/2 teaspoon vanilla extract

1/3 cup crushed walnuts

1. Preheat oven to 350 degrees.  Line a 12-cup muffin pan with paper liners.  In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.

2. Make a well in center of flour mixture.  In well, mix together butter, applesauce, mashed bananas, eggs, and vanilla extract.  Stir to incorporate flour mixture, but make sure not to over mix!  Fold in walnuts.  Spoon into muffin cups.

3. Bake until a toothpick inserted in center of a cupcake comes out clean, about 20-25 minutes.  Cool on a wire rack.

Honey -Cinnamon Frosting

1 1/4 cup powdered confectioner’s sugar

1/2 cup unsalted butter (softened)

1 tablespoon honey

1/2 teaspoon vanilla extract

1. Cream butter with electric mixture until smooth.  Add sugar, honey, and extract.  Beat on high for about 4-5 minutes.

2. Frost cupcakes with back of spoon once completely cooled.
